If there’s one thing Björn Swanson does exceptionally well, it’s this: he manages to ground fine dining with comforting flavors—or, conversely, turn a meatloaf into a culinary spectacle.

That’s exactly what his new restaurant, Norms, which opened four months ago on Elisabethkirchstraße, is all about. “Childhood Food – a bit different,” says the top chef himself; every plate is a flavor explosion, every bite spectacular yet intuitively understandable. Another example is his mustard egg.
A paradise for this spoon dish. Bartosz Bernat, the sommelier at Norm, is in charge of the wines; he honed his expertise at some of Copenhagen’s most renowned restaurants. For this evening, he has planned an exclusive and very special wine journey.
