Chef Holger Mootz interprets guests' favorite dishes with great sensitivity and finesse—a three-course menu that is guaranteed to make hearts beat faster.
The meal begins with tender marinated char with cucumber, kefir, and apple vinaigrette, which is both fresh and light. This is followed by veal loin under an aromatic herb crust, which forms a harmonious whole with smoked cauliflower purée and young vegetables. The crowning glory is Liebesknochen (love bone) with salted caramel, accompanied by “Sweet Sin” ice cream.
Each course is accompanied by a glass (0.1 l) of carefully selected wine: Klingelberger Riesling, Pinot Noir, and Dursecco Rosé – perfectly matched to the menu and the occasion.
