The first thing you notice in the kitchen of Restaurant Tim Raue: The classic side dishes are gone! No pasta, rice, white sugar or bread. This draws the eye and flavour to the essentials: the great combinations on your plate that are rooted in Asian cuisine with all their sweetness, acidity and spiciness.

The exciting thing: you will find miso, wasabi and shellfish - but almost all the products come from the region or Europe: the shellfish from Norway and the mandarins from Sicily. The cabbage and juicy redcurrants from farmer Uwe also go well with the "Hase Sichuan"
