Four seasons are simply too few for chef Kamel Haddad to express nature's diversity. With his close eye and sense for fine flavours, he therefore brings out the seasonal highlights each month, which are ripened to the point or traditionally celebrated at that time. "Of course, it takes effort to rethink the menu from scratch every month," says Kamel Haddad, "but that's how we make a variety of produce the star and always give new dishes the freshness, intensity and quality that brings us joy in the kitchen and our guests."
Fittingly, the restaurant's two other creative minds, operators Tim Hansen and Vitali Müller, invite winemaker and wine merchant friends twelve times a year to curate beverage accompaniments to match the dishes. This makes for exciting variety, but also for an extremely fine matching of the accompanying drinks to what is on offer from the kitchen. The micro-seasonal enjoyment concept is rounded off by the city's best mixologists, who each create one of the cocktails of the month as guests. Roxy from Bar Provocateur pays homage to the month of March with a special composition that brings the light spring awakening to life in the glass.
The place at the stylish Chefs Table facing the open kitchen - and at 12seasons more than half of the seats are Chef's Table - is highly recommended, especially because of its proximity to the heart of the restaurant. For trendsetters, foodies, regulars and curious epicureans, there will be a convivial kitchen party on the last Sunday of the previous month, where guests will get an exclusive taste of the next month's specials. Tickets for the unique kick-off are limited and currently cost between 80 and 100 euros.
