Fermentation Art Dinner

Ancient Japanese ceremonies marking the transitions between the seasons were intended to establish a connection between the world of the living and that of the dead. Rituals set these transitional periods apart from everyday life. In Japan, annual events are still traditionally celebrated with special foods.

Reiko Kanazawa organizes four evening events each year: for the equinoxes (spring and fall), for Bon (a Japanese custom following the summer solstice), and for New Year’s. These special events offer us the opportunity to become aware of the physical and transitory nature of our presence, as well as the changing of the seasons.

This time, on September 26 and 27, Reiko Kanazawa will create an installation featuring suspended food items. Together with Yuki Nishino, she will prepare a multi-course Equinox menu featuring fermented dishes. The lovingly prepared dishes will include regional German ingredients, products from mimi, and special wild herbs from Florinn Bareth.
