Maguro Carpaccio (14.50 euros) with tuna, white soy, yuzu ponzu, parmesan aioli, olive oil, daikon, and shiso, as well as Wagyu Aburi (€22) with seared Japanese Wagyu, shiitake, soy sesame, rice croquettes, miso aioli, tsume, and kizami wasabi.
