While Herz & Niere ('Heart & Kidney') uses regional and seasonal ingredients, but the special feature is that all parts of animals are used, reviving many forgotten offal dishes, including, for example, the original Berlin specialty of mutton throat with stewed cucumbers. Sweetbread, veal kidney and duck heart are also served here as refined dishes, also as part of a surprise menu that changes every day.
