The tasting workshop of the worldwide network

At HERMANN’S eatery on Torstraße, they never stop experimenting, be it with fermentation, pickling or baking. Chef Andrea Iannicella takes seemingly familiar delicacies and uses new ingredients and cooking methods to develop completely new dishes. The focus here is on looking after the planet, clean meat and vegetarian alternatives, good health, zero waste, food from by-products and long-forgotten ingredients such as old varieties of grain.

One example of the experimental cuisine at HERMANN’S is the jackfruit, which comes from Indonesia and whose fibrous structure makes it the ideal meat substitute in the jackfruit burger.
